Sourced from an old vineyard in Utiel-Requena, this wine is made from 100% Bobal and reflects Clovis Ochin's minimalist approach to winemaking. The vineyard was formerly farmed by Partida Creus and is worked with a focus on preserving the character and energy of the site.
The grapes undergo whole cluster fermentation with seven days of maceration before being transferred to glass dame-jeannes for aging. Reserve juice is held back and used for weekly topping to protect the wine naturally from oxidation. The wine is bottled without fining, filtration, or the addition of sulfur, resulting in a pure and vibrant expression of old vine Bobal.
