3 Fonteinen Oude Geuze is a blend of old lambics. It is spontaneously fermented, matured in oak barrels, and then sees extended bottle aging (an average of 18 months) and refermentation in bottle. It is unfiltered and unpasteurized.
For this Oude Geuze, 3 Fonteinen blended lambics originating from 6 different barrels and 6 different brews, brewed by both Brouwerij De Troch, Brouwerij Lindemans, and themselves. 80% of the blend consists of 3 and 4-year old lambics, bringing the weighted average age to almost 30 months at the moment of bottling. The cereals for the 3 Fonteinen brewed lambics were sourced from their own Cereal Collective .
