Vinification: The wine ferments in stainless steel tanks in Sanlúcar. The wine undergoes biological aging under a veil of flor for over 5 years. It ages in the most important bodega building in Sanlúcar called Misericordia which is at the top of the hill in the Barrio Alto.
Tasting Notes: Deliciosa Manzanilla has delicate salinity and yeasty aromas along with citrus, almonds, minerals and fresh herbs. It is dry, crisp, and brimming with mineral freshness. There are pronounced nut flavors as well as a delicate, brioche character. Serve chilled in a white wine glass as an aperitif or paired with seafood and fish dishes.
