Winemaking Notes: The Sauvignon Blanc grapes are manually harvested. At the winery, they are destemmed and macerate before soft pressing. Then, a controlled fermentation is performed with selected yeasts at no greater than 26°C. After primary fermentation, the blend rests in oak barrels for four months until bottling.
Tasting Notes: The Terra Mädi Sauvignon Blanc is expressive with aromas of chamomile, newly cut grass, citrus, and hint of green pepper. It is dry on the palate with excellent acidity and a round mouthfeel from the oak.
Terroir Notes: At approximately 2,000 meters (6,500 feet) above sea level, Querétaro is one of the highest wine regions in the world. This extreme elevation yields grapes with thick skins and vibrant acidity. The region has a semi-arid, semi-desert climate, with winter and spring marking the dry season. Trickle irrigation is used to support vine growth and reduce stress.
Spring weather can be particularly volatile. Warm air currents combined with moist Atlantic winds create ideal conditions for cloud formation and hail. Hail-resistant mesh has been installed to protect the vines, which also serves as a barrier against birds, rodents, and insects.
The soils here are primarily clay with tepetate—a calcareous volcanic hardpan. When fractured during vineyard preparation, this tepetate allows vine roots to penetrate as deep as 3 to 4 meters. This deep rooting enhances nutrient uptake, improves vine resilience, and ultimately contributes to the structure and character of the wines. The diversity of soil and microclimate allows for a broad range of grape varieties to thrive.
