Winemaking Notes: 30 days of whole cluster maceration. Aged in a 700-liter concrete egg for 8 months before before bottling. The only additive is a small amount of sulfites at the time of bottling.

Tasting Notes: Dried cherry, rose petals and mushrooms on the nose with an acid-driven, persistent palate. This wine is light to medium bodied and we recommend serving it chilled.

    Swick fans, you should grab this one, especially if you’re loving chilled reds. This usually has 20 days of whole cluster ferment and is aged in the concrete egg for eight months. But this vintage he had to let it go for ten more days because the wine just didn’t deepen in color. Go figure. But the flavor? The rose and cherry? That’s all there. It’s kind of delicious, with an emphasis on a sweet tart-like acidity.
