This gorgeous samyangju (3 stage brew) first graced us with its presence last summer, as Alice Jun's first seasonal botanical makgeolli. Similar in many ways to that original brew, the Omija Makgeolli is light-bodied, bone dry, and bright with acid. Fermented with omija (schisandra) berries and hibiscus flowers, it borrows from them a pink hue, as well as their subtle salty, tangy, and bitter profile. It is a lovely and refreshing beverage sool for the warmer season.
As always, Omija is naturally fermented and made using traditional Korean brewing methodologies. It fermented over 4 weeks with the addition of omija (schisandra) berries and hibiscus flowers directly into the mash for the last 7 days of fermentation.
