Blend: This year's blend includes three main grapes plus a teeny tiny addition of their estate La Gracia Rkatsiteli and Petit Manseng. It is a blend that balances texture, structure and aromatics.

Winemaking Notes: The fruit was crushed, transferred to tank and left on skins for 30 days. Native yeasts were used for fermentation. The tank was allowed to get warm (above 95 degrees) to extract as much as possible. Two pump overs were done per day until dryness. The wine was then gently pressed via a bladder press. It went fully through malolactic conversion, which softened the acids int he wine. Bottled unfined with total SO2 less than 50ppm.
