Prized for its resilience, the pale yellow-green Caña Dura sugarcane, also referred to as Caña Fierro, is the most common cane variety found in Cosautlán de Carvajal, Veracruz, where this batch was distilled by fourth-generation aguardientero Marcos López on a five-plate continuous still made of stainless steel and copper. Not only an adroit aguardiente distiller, Marcos also cultivates coffee, limes & citrus honey.
