Winemaking Notes: Les Closiers, the entry wine to this estate, is assembled from vine throughout the estate's holdings. All the grapes are hand harvested and the fermentation is spontaneous with indigenous yeasts. After a fermentation and maceration of about one month, the wine is aged in stainless tanks for an additional eight to ten months before bottling. No products are used except a minimal level of SO2 prior to bottling.
