Production Notes: The apples were manually harvested from orchards that are organically and biodynamically farmed. The orchard trees range between 50-200 years old in age. The apples were dehydrated for 4-5 weeks before being ground and pressed. The fruit was then fermented with indigenous yeast in tank before finishing the process in bottle.
