Hatzidakis Winery was founded in 1997 by Haridimos Hatzidakis, a Cretan-born agronomist and winemaker who came to Santorini after studying oenology and viticulture in Athens. After working with Boutari and gaining experience in both Santorini and Crete, Haridimos established his own winery with his wife, Konstantina, whose family had vineyards in Pyrgos.

The family’s vineyards had been largely abandoned following the 1956 earthquake, and Haridimos began the process of restoring the old vines. The winery itself was eventually established in a traditional cave on the outskirts of Pyrgos, reflecting the practical, low-intervention approach that became central to Hatzidakis.

Hatzidakis quickly developed a reputation for making Santorini wines with depth, power, and a strong sense of place. Rather than relying on the highly reductive style that became increasingly associated with Santorini Assyrtiko, Haridimos focused on more textural, terroir-driven wines that could show the differences between individual vineyards. The Mylos and Louros bottlings, from vineyards between Pyrgos and Megalochori, were particularly important in demonstrating the diversity within Santorini’s volcanic landscape.

The estate has also played an important role in preserving and exploring Santorini’s lesser-known indigenous varieties. Hatzidakis was among the first producers to bottle single-variety expressions of Aidani and Mavrotragano, helping bring greater attention to grapes that had long played a secondary role to Assyrtiko.

Although production has remained deliberately small, Hatzidakis has grown beyond its original garagiste roots while maintaining the same focus on old vines, native varieties, individual vineyards, and the distinctive volcanic terroir of Santorini. The wines remain an important part of the island’s modern wine history and a benchmark for producers looking to push beyond the obvious expression of Assyrtiko.
