El Occidental is a mezcal project from Casa Endémica, the spirits company founded by renowned Mexican agave expert Esteban Morales, whose portfolio also includes La Venenosa and Maxico Mistico. Created in response to growing international demand for high-quality, affordable mezcal, El Occidental offers an authentic expression of traditional production while remaining accessible to a broader audience.
The project began nearly a decade ago after requests from the U.S. market for a mezcal that could deliver exceptional quality at a more approachable price. Rather than relying solely on the limited production of small family palenques, Casa Endémica invested in slightly larger distilleries and established cultivated agave plantations. This approach allows El Occidental to produce consistent volumes while creating stable employment opportunities for local communities. Farming its own agave also helps reduce pressure on wild agave populations, supporting the long-term sustainability of Mexico's native ecosystems.
Unlike many artisanal mezcal brands centered around a single maestro mezcalero, El Occidental is intentionally built around a collective production model. The distillers who craft the spirits may change over time as they pursue their own projects or rotate through production, but the production standards and philosophy remain constant. Every release is produced without additives and relies exclusively on spontaneous fermentation with native yeasts.
All El Occidental mezcals are made using traditional methods. Mature agaves are roasted in conical, stone-lined underground pits fueled by oak and volcanic rock before being crushed with a mechanical mill. Fermentation takes place naturally in 1,100-liter wooden vats over seven to twelve days, depending on ambient conditions. The fermented mosto is then double distilled in copper alembic stills using deep well water.
