Since 2004, Hwanggeum Bori, meaning “Golden Barley,” has been dedicated to an uncommon pursuit in Korean distilling: producing premium soju from barley. Through its commitment to quality and relationships with local farmers, the distillery has helped give new value to a grain with a complicated place in Korea’s agricultural and culinary history.
While rice has long been a staple of the Korean diet, barley historically played an important role during times of scarcity. In rural communities, supplies of rice harvested in the fall could run dangerously low by spring, while the summer barley crop was still weeks or months away from harvest. This difficult period became known as bori gogae, or the “barley pass,” and referred to the spring famine season. Barley provided an essential source of food during lean times, but its association with hardship also led it to be regarded by some generations as a symbol of poverty and famine.
As Korea’s economy developed and rice became more readily available, demand for barley declined significantly. Hwanggeum Bori saw an opportunity to reconsider the value of this historically important grain. By working with surplus locally grown barley and transforming it into premium soju, the distillery supports regional farmers while giving barley a new identity within contemporary Korean sool.
Barley-based soju remains relatively uncommon in South Korea, making Hwanggeum Bori’s dedication to the grain particularly distinctive. Through years of careful production, the distillery transforms this humble agricultural staple into a refined spirit with notes of toasted grain, warm spice, nuttiness, and a character reminiscent of gingersnap.
The name Golden Barley reflects the producer’s philosophy: to elevate an overlooked grain by celebrating both its agricultural importance and its potential as a distinctive ingredient for soju. In doing so, Hwanggeum Bori transforms a grain once closely associated with necessity and hardship into one of craftsmanship, quality, and renewed pride.
