Mayor Pingree Bourbon is made from a mash of corn, rye, and barley and then aged for a minimum of 4 years in 53 gallon barrels. This is rare bourbon crafted in the classic style of America’s finest and continues to prove that over time there is no substitute for proper aging and barrel size. Valentine Distilling invests meticulously in every step of the process and thereby delivers one of the consistently best whiskies in the American distilling arena.
The Process: Two distinct mashes are distilled and blended to create a complex and unique bourbon. Mash #1 is 60% corn, 10% barley, and 30% rye. Mash #2 is 70% corn, 20% rye, and 10% barley. As with gin steeping and production, timing in making whiskey and adjusting for the effects of weather on barrel aging are critical dimensions of the process. The distillates are poured into 53 gallon American oak barrels with char #3 and #4. Depending on the time of the year, the distillate goes to barrel between 107 and 115 proof. During the summer, distillates go to barrel at a lower proof in order to balance the extracted flavors with those contributed by the wood. Heat and humidity open the wood grains of the barrel and allow for intense penetration of distillate during the first months of aging. During cold months, barrels contract and flavor extraction is greatly reduced.
Distilling: The Mayor Pingree Bourbon is triple pot distilled – rarely heard of and even less often practiced in bourbon distilling. Three passes in the pot gives an intimately tuned discretion to cut, select, run slower or faster distillations, and enhance copper contact to get extremely clean distillate. Distilling the bourbon 3 times gives the opportunity to express dramatic flavors during fermentation, using a unique approach of extremely hot and furious fermentation, which create esters that will ultimately produce intense fruity notes in the finished whiskey. In the first pass hardly any of the heads are removed because those will come out in pass 2 and 3. With these volatile heads in the 2nd and 3rd pass, new material is made, which in turn creates unique aromatics and flavors. On the 3rd pass there is an opportunity to create very long-molecule chains, which has a huge impact on what the whiskey tastes like years later. Distilling this Mayor Pingree Bourbon thus strikes an enjoyable balance between short chains to penetrate and interact with the barrel and long chains for enhanced texture. At bottling, Mayor Pingree Bourbon is blended with MGPI bourbon, proofed down to 90, finally hand bottled and labeled.
About the Name: Hazen S. Pingree, mayor of Detroit (1890-1897), is considered one of the greatest mayors in U.S. history. He was a champion for the Detroiter, fighting monopolies and corruption. This is made to honor the enduring spirit of 'Old Ping' with a bourbon for the people.
