Nicole Deriaux produces a small amount of sparkling wine from her Chardonnay plantings. The young vines are used to produce the Crémant. The wine undergoes both alcoholic and malolactic fermentations and then spends at least eighteen months on the lees as it passes through the second fermentation in bottle (a la Champagne). Vinified entirely dry and left strictly brut at the time of disgorgment.

    (Must-Try Fizz) Nicole Deriaux is the third-generation winemaker at this 9ha property in the village of L'Etoile (note the star on the bottle), since her grandfather planted vineyards here in 1920. This 100% Chardonnay spends 18 months aging on its lees in bottle and see no dosage, resulting in a chalky, bone-dry fizz with lovely toasty autolytic complexity to join flavors of apple compote, baking spices and fresh acidity.

    (Weekday Wines) The austere green apple, lemon and ozone-like minerality of this 100% Chardonnay offer a great alternative to entry-level Champagne. Digestive biscuit notes add depth and interest, refreshed by mouthwatering acidity and a fine mousse.
