'Altos Esters' High Ester Pot Still Rum

This is an unaged rum produced in the town of Santa Maria Tlalixtac, Oaxaca. Along this steep slopes of this region, the Krassel family plants, harvests, and distills 100% organic Java sugarcane from altitudes as high as 4,000 feet above sea level. Like all Alambique Serrano rums, Altos Esteres was distilled from naturally-fermented cane juice harvested from the steep hillsides of the region. It has been bottled at natural strength with no added water nor sugar.

Fermentation: 25 days in pine tanks with ambient yeast, fermentation becomes anaerobic after 8 days
Still: Copper pot stills
Tasting Notes: Capers, sea breeze, tomatillo, and pickled olives on the nose. The palate is fresh pressed cane juice with a whiff of fresh eucalyptus and secondary notes of grilled pineapple, green olives, and white grape.
