Vineyard Notes: Grapes come from a dry-farmed vineyard in Bethlehem, Palestine, located at 800 meters above sea level and planted to limestone soils. Pruning and harvest are done by hand.

Winemaking Notes: Grapes are hand picked in mid-September and then destemmed and soft pressed into stainless steel tanks. The juice is fermented with carefully chosen yeasts and left to age on lees for 4-6 months. The juice is filtered twice before bottling.
