Vineyard Notes: This 100% estate Pais is from Gonzalez Bastias' 200-year-old vineyard along the banks of the Maule River in the Maule region. The vineyard is farmed without irrigation or the use of machines and according to biodynamic principles.

Winemaking Notes: Grapes are manually harvested and fermented with native yeasts. After 3 days of skin maceration, the wine went through a slow, extended three month fermentation. It was bottled unfined, unfiltered, and without any additions.

Tasting Notes: This wine drinks like an Italian rosato. Both herbaceous and fruity, Descabezado is soft on the palate with lots of strawberry and raspberry. It's thirst-quenching while still be complex and thought provoking. So excited to have this new addition from Gonzalez Bastias available in Illinois!

About the Name: Decabezado translates in English to “headless.” This wine is a tribute to the terrible floods in 2023 when the Maule River overtook Gonzalez Bastias' vineyards, winery, and home. Luckily the vines were not damaged, since their advanced age and deep roots help them withstand the occasional floods (and in the past, fires). However, the cellar, winery, and their home were all nearly or completely destroyed. Jose Luis and Daniela say they felt quite “ headless” during this time. This new wine from Gonzalez Bastias was made in their new winery and is a testament to the determination of Jose Luis, Daniela, and their beautiful 200-year-old Pais vines.
