Jinmaek 40 is a wheat soju inspired by a Korean distilling tradition dating back to the 1540s. Although wheat was historically used to make soju, the practice largely disappeared over time. Jinmaek is dedicated to reviving this nearly forgotten tradition using 100% organic, estate-grown wheat.

The inspiration for Jinmaek Soju comes from Soowoonjapbang (수운잡방) , one of Korea’s earliest culinary texts, written by scholar Kim Yu in the 1540s. The manuscript documents food and drink traditions of aristocratic families in the Andong region, including methods for producing soju from wheat. After discovering the historic recipe, Sung-ho Park began a years-long effort to understand and restore the tradition, interpreting historical records while adapting the process for a modern distillery.

The result is Jinmaek Soju. The name comes from jinmaek (眞麥) , a historical term for wheat. The distillery released its first commercial expression, Jinmaek 40, in 2018.

Jinmaek 40 is made entirely from organic wheat grown on the estate and undergoes a slow, three-stage fermentation at low temperatures to develop the grain’s full aromatic character and depth of flavor. It is full-bodied and aromatic, with pronounced nutty and floral notes, the distinctive fragrance of wheat, and a gently spicy finish.
