Malvasia de Sitges: As of 2020, Penedès only had 57 hectares registered as Malvasia de Sitges. This grape variety ripens late while maintaining acidity and low alcohol. It has great potential for the future as the climate changes in Penedès.

Vineyard Notes: Pepe planted Vinya de la Plana in 2018 to help recover this local variety and produce a monovariety white wine. The 1.4 hectares are Royat tranined. Its northeast orientation provides long hours of sunlight.

Winemaking: Manual harvest on September 7th in 15 kg boxes. The grapes went directly into the press; whole grape pressing yielded 50%. Fermentation occurred spontaneously with native yeast in a cement tank. The temperature was controlled between 18 and 20°C. Fermentation lasted 17 days. The wine aged for 9 months on its lees. It was not stabilized or filtered. Bottled on August 30th, 2022, the wine continued to age for a minimum of 9 months before release.. No oenological additives were used at any time during the process.

    Pepe Raventós planted a vineyard with Malvasía de Sitges from which he produced a 2021 Malvasía de Sitges that is maturing in concrete egg. It's an aromatic variety that is quite challenging to cultivate and has variability from one plant to the next and from one vintage to another, but it keeps amazing acidity in the Mediterranean climate. This has 13.4% alcohol, doesn't go through malolactic and has a low pH of 3.14 and 7.7 grams of acidity. Sharp, tasty and almost salty. There will be some 1,500 bottles of it.
