Brewing Method: Once fermentation has finished, the sake is pressed off from the sediment resulting in a clear sake. It is after this that the sediment is reintroduced to the sake. This allows Kuniko to balance the flavors and texture of the sake, a process that has taken the brewer a long time to perfect.
