This is a pét-nat of macerated Chardonnay made in collaboration with Erewhon Market. 

This fizzy sparkler is made from beautifully and organically farmed Chardonnay from Gamino Vineyard in the Redwood Valley, Mendocino. Redwood valley is a cooler region that is influenced by the Pacific more than surrounding regions due to a gap in the coastal ridge. The fruit comes in a little later with longer time to mature on the vine giving more potential complexity and freshness to the grapes. Sunshine is on the skins whole cluster for 1 day and bottled at 0 Brix to finish in bottle.

It's highly gulpable with stoney minerality and notes of Asian pear and citrus rind.
