Winemaking Notes: Arboreus is made from a Trebbiano clone known as Trebbiano Spoletino which is trained so that the fruit hangs high above the ground. The vineyards are planted in the low hills between Trevi and Montefalco. The sites face east and southwest, and the vines are over 130 years old on pre-phylloxera rootstock. Yields are meticulously controlled through winter pruning and debudding. Harvest generally occurs during the first two weeks of October. After crushing and destemming, the wine ferments spontaneously in stainless steel tanks, followed by spontaneous malolactic fermentation. It spends 22 days on its skins. The wine is then aged in stainless steel tanks for at least two years prior to bottling. As always, the wine is unfined and unfiltered.
Tasting Notes: One of the early success stories in the modern-day revival of skin contact white wines, Arboreus' palate is chiseled, markedly tannic (though well-balanced), and driven by resonant acidity, with marzipan and apricot notes echoing strongly.
