Winemaking Notes: After the harvest in early October, the grapes are left to dry on trays until February when vinification starts with native yeast. The wine ages in large French and Slovenian oak barrels for a minimum of 18-20 months. The wine is not filtered or fined.

Tasting Notes: Ca’ Del Monte’s Amarone Della Valpolicella Classico is a dark angel of sorts. The brilliant garnet red color lures you in, while the ghostly nose works it magic into your heart. Warm raspberries, violets, fennel, and sweet spices wrapped in mellow oak will charm you. This is not for the weak; it is a full-bodied wine with noble tannins and a secure backbone. Complex with superb nuances, this wine is an adventure that your mind will long for. Like the wine, big and strong foods pair best. Try it with stufato (meat and vegetable stew) or a beef tenderloin with a truffle butter sauce. Or keep it simple with pasta and beans, some bread, and tasty seasoned cheeses.
