Tasting Notes: 100% Muscat from Lost Hills Ranch in the Yorkville Highlands, this is as atypical as it gets for Muscat in every way. It is not sweet or flowery or soapy. In fact, it is the inverse of all of that. Skin fermentation lends an altogether savory, five spice-laden, textural version of bubbles not just meant for toasts and weddings. Effusive orange flower and curry spices show on the nose; very fine and persistent bubbles show on the palate; all with an added textural dimension of slight tannin from the Muscat skins.
Winemaking Notes: The 2019 vintage was skin fermented, pressed, and then aged for one year in a neutral vessel at which point Evan added fermenting juice from the 2020 vintage and sent it to bottle to referment. After two years in bottle, the wine was disgorged in August of 2022.
