Terroir: Bodegas Olivares is located in the northern part of Jumilla, which offers superior growing conditions. The vineyards are at high elevations of over 800 meters (2,625 feet) where nights cool down quickly resulting in wines with astounding freshness and equilibrium. The sandy soil has allowed for the vines to be own-rooted (ungrafted). This particular wine comes from an 11-hectare vineyard, which includes vines planted between 1872 and present day.

Aging: The Monastrell ages in a combination of barriques and demi-muids. A few barrels are new, but most are second and third passage barrels from elite Burgundy producers.

    I was less taken by the oak in the 2020 Altos de la Hoya, produced in a more commercial and mainstream way from ungrafted old Monastrell vines. But there's good fruit and depth here, a medium to full-bodied palate and fine-grained tannins, and the wine has the stuffing and balance to overcome the creamy oak with some more time in bottle. It matured in a mixture of oak vats and barrels for some six to eight months.
