Tasting Notes: Each year Rising Tides represents the vintage as a whole and the 2019 is a wine that is deep and complex while light on its feet. This is a perfect showcase of the balance between dense dry farmed flavors and structure against the brilliant limestone rooted acidity that is emblematic of the wines from this year. Red strawberry Grenache notes are grounded by darker Syrah flavors of elderberry and black olives. Herbal aromatics collide with hints of oak to conjure the image of sage butter simmering in a pan. Undertones of wet granite and aged balsamic carry long into the finish. Drink now through 2029.
Pairings: Roasted chicken with root vegetables, soy glazed salmon, beef bourguignon, Thanksgiving dinner
Vineyard Notes: The vineyards are farmed organically and sustainably. Currently (as of 2017) about 80% of his wines are made from estate fruit. Sulfur is sprayed to protect against mildew. Irrigation is limited and mainly used to help the young vines stay healthy. The crop loads reflect the natural balance of the vine. The grapes are harvested at the peak of ripeness to produce wines that are rich and concentrated.
Winemaking Notes: In the cellar, Matt uses a healthy balance of art and science. Grapes co-ferment to achieve balance and complex flavors. Fermentation tanks are not heated or cooled as Matt let’s the wines evolve naturally. Sulfites are rarely added before bottling.
Aging: 18 months in 3,000-liter foudre, 2,000-liter concrete tank, and a couple of 500-liter puncheons
