Viticulture: Chateau de l'Eperonniere is in organic conversion with no herbicides used for 5 years and a movement away from synthetic treatments to copper sulfate sprays. This wine is sourced from their Croix de Picot parcel, which overlooks the Loire from the Savennières hill. The soil is almost exclusively composed of schist, which renders a classic Savennières: rigorous, bone-dry, with an intense minerality to the finish.

Fermentation: Grapes are manually harvested and then whole-cluster direct pressed. The Chenin Blanc ferments spontaneously with native yeast in neutral barriques. It spends 12 months aging on its lees. Malolactic fermentation is blocked due to naturally high acidity.
