Terroir Notes: The Prié Blanc is sourced from 6 hectares of terraced, south-facing vines in small, scattered parcels surrounding the villages of Morgex and La Salle. The vines are trained in pergola bassa on their own rootstocks.
Winemaking Notes: The grapes are manually harvested. After crushing and a 1-2 day maceration in the press, the wine ferments with a pied de cuve and selected yeast in stainless steel tanks. The wine remains on fine lees with regular batonnage until assemblage prior to bottling. The majority of vats go through spontaneous malolactic fermentation.
Tasting Notes: Ermes Pavese's Prié Blanc is a stunning white wine produced from some of the highest vineyards in Europe. It is austere, racy, and mineral with aromas of citrus blossom, lemon, and crushed stone. It's vivacious with great length.
