Winemaking Notes: Grüner Veltliner is harvested by hand from biodynamically farmed vines. 50% of the grapes are whole cluster pressed, while 50% macerate on the skins for 4–8 hours. Grapes are slowly and gently pressed over 8 hours. Fermentation occurs spontaneously with native yeast in steel. Little Buteo aged on the lees without SO2 in steel tanks for 6 months.
Tasting Notes: The Little Buteo is a more approachable version of its bigger brother, the Buteo. Enjoy aromas of Golden Delicious apple, lime, melon, and a touch of vanilla. Little Buteo is tightly woven with a steam-lined, clear-cut structure. Its mineral character gives freshness, vitality, and sweeps over the palate.
About the Name: Michael Gindl names many wines after the animals living on his farm. Buteo refers to "buzzard," a bird that is wild and free like his wine and the guardian of his vineyards.
