Vineyard Notes: Vineyards are comprised of volcanic sand formed by redeposited ash (known in Chile as trumao ) and are dry-farmed without any chemical intervention. Many of Cacique Maravilla's vines are well over 100 years old and have been in the care of Manuel Moraga's family for generations.
Winemaking Notes: After being destemmed, grapes macerate on the skins in open barrels of Rauli (the native pink oak of Chile) for 24 hours before being foot stomped and then gravity fed into tightly sealed fiberglass Ecotanks for two months. Fermentation occurs with ambient yeasts. The wine is bottled with some residual sugar so that secondary fermentation occurs in bottle. Wine is bottled unfiltered and no sulfites are added.
Sparkling wine is not traditionally made in Chile, but Manuel's father stumbled upon this method that the winery continues to use to this day. The name chacolí is a reference to the process in which the wine is made, very much like the txakolis of old in the Basque Country.
Serving Suggestion: This wine is best served very cold with apertifs and desserts. Before serving, chill wine with the bottle resting upright so sediment settles to the bottom of the bottle.
