Winemaking Notes: Spontaneous fermentation occurred in old 1,050-liter foudres with indigenous yeast.
Tasting Notes: MicroBio Verdejo has a beautiful nose that is full of white peach, orange peel, grapefruit, and key lime. The palate has wonderful vibrancy and tension. Generous stone fruit and salinity mix beautifully to create a wonderful expression of Verdejo.

"The eponymous white 2018 Microbio was produced with the juice from the whole clusters fermented in used 1,000-liter oak foudres from Alsace. The wine is kept for one year in the foudres without being topped up, so it develops a layer of flor yeasts. The character of the wine reminded me more of something from Jura than from Jerez. Added to the bottled blend, there is a fraction of wine from 2017 that had more exposure to the flor, so it adds more complexity and depth. So now Gozalo leaves some wine from the previous years to keep doing this. The palate is very harmonious, with integrated acidity and pungent flavors. The spiciness of the wine would make it work very well with food."
