Harvest Method: By Hand

Winemaking Notes: Grapes were sorted by hand via a two-tiered sorting system (whole cluster sorting followed by individual berry sorting). They were destemmed into open-top stainless steel tanks with native yeast. Twice daily punch downs and/or pump overs helped to maximize flavor extraction. A basket press was used to extract the juice. Maturation occurred for 12 months in neutral American oak barrels. The wine went through malolactic fermentation.
