Winemaking Notes: Tethys is a limited production dessert Riesling. Frozen grapes are gently pressed; this is a long and slow process that takes about a day to two to complete. The resulting juice is dark golden in color and concentrated with sugar and flavor. The juice slowly ferments in a small stainless steel tank. Then the wine is naturally fined for clarity and filtered for stability prior to bottling.
Tasting Notes: The nose bursts with poached pears baked with cinnamon and cloves. Some tropical notes of melon and lychee come through along with hints of cherry blossom. Lots of bright acid moves this viscous wine over the mouth. Nuts, spice and potpourri show themselves. This is not cloying but satisfyingly full and rich; it's like a vibrant, snappy Sauternes without the botrytis. A fatty piece of foie gras on toasted brioche and some ginger jam or a slap of marmalade would do nicely. Vanilla ice cream with caramel would also be heavenly.
