Vineyard Notes: This 100% old vine Pais is from a single vineyard near the town of Sauzal in the Maule region. The vineyard was planted before 1900 and is organically dry farmed.

Winemaking Notes: Itzal Pais is fermented with native yeast in concrete vats. It matures for 10 months without lees contact.

Tasting Notes: Plum, currant, red fruits, and toasted pine nuts dance around notes of dried herbs, a saline quality, and wet soil on the nose. The palate shows red fruit and crushed dried leaves held up by a good structure of tannin and acid. An elegant showcase of a single vineyard Pais from over 100-year-old vines.

    The 2016 Itzal from a specific plot of pure País in the zone of Sauzal from a place sheltered by the afternoon sun (itzal means shadow in Basque) on very poor granite soils. It's a different expression of País, more serious and with freshness. The palate is slightly more austere, with fine-grained tannins and granite character.
