Azuma Rikishi Junmai Ginjyo is brewed from Gohyakumangoku sake rice. It is a cave-aged sake that is charcoal filtered only once prior to bottling to produce a mellow, moderately fruit-forward, and exquisitely refined body. It has a subdued brightness, a mildly fruit-forward moderate body with a sharper finish.

Tasting Notes: The nose offers an ideal balance of fruit and grain/rice with hints of red apple skins and river stones. The palate confirms the nose delivering a silky fruit-driven core with delicate mineral and hints of yeast. This is ideally balanced with great length.

"Why drink this one? Well besides being a great sake it is aged in 800-meter-deep cave that was formerly a highly-classified tank building facility! Established in 1849. Azuma Rishiki is a mellow, medium-bodied sake with soft notes of peach, pear, and apple while melon follows on the palate with a brisk finish. The cool temps underground keep this sake soft and moderate. Not like a tank at all. Pair with Pont L’eveque cheese, sashimi salads, and oysters.”
