Val de Mer was born from a partnership between Chablis winemaker Patrick Piuze and Champagne producer François Moutard. In 2010, Moutard acquired a winery near Tonnerre, just outside Chablis, and brought Piuze in to oversee the vineyards and make the wines.

Piuze had already built a following under his own label, known for sourcing quality fruit throughout Chablis while keeping production small. Val de Mer gave him another outlet for his work, with its own vineyards, cellar and identity. The project produces sparkling wines alongside Bourgogne, Petit Chablis, Chablis and select premier and grand cru bottlings.

The vineyards are farmed with a focus on responsible, low impact practices. The sparkling wines come from estate vineyards around Tonnerre, are made entirely in stainless steel, receive no dosage and rest on the lees for at least 15 months before disgorgement.

Val de Mer has a style of its own. The wines tend toward bright acidity, clear mineral character and a more direct, classic profile, reflecting the cool valley where the winery sits. For Cream, the sparkling wines offer the same attention to freshness and detail, with the added appeal of a no dosage approach and a reliable source beyond the limited production of the Patrick Piuze label.
