Born on the French Caribbean island of Martinique, Pascal Carole has spent much of his life moving between countries, with extended stays in Canada and the United States before ultimately finding his way to France's Loire Valley.
After nearly a decade working in San Francisco's technology sector, Carole's life took a dramatic turn when a wine class at the famous natural wine bar / shop Ruby Wine introduced him to the world of winemaking. What began as curiosity quickly became a calling. Shortly after making a small batch of Chardonnay from hand-harvested grapes, he decided to leave the tech industry behind and pursue wine full-time. He spent a year working alongside Brent Mayeaux at Stagiaire Wine before relocating with his family to Saumur in 2022 to launch his own project.
Today, Pascal and his family live on Île Offard, a small island in the Loire River known locally as "between the bridges." There, he has transformed a modest garage into a winery and cellar. The intimate space is perfect for his intentionally small production, typically between 2,000-3,000 bottles annually. The scale allows Carole to devote meticulous attention to every detail while embracing a fearless, intuitive approach to winemaking. His wines are currently produced without the addition of sulfites, resulting in vibrant, expressive bottlings that reflect both place and personality.
Carole focuses primarily on Cabernet Franc from vineyards he farms in the commune of Distré. He also works with organically farmed Cabernet Franc and Chenin Blanc sourced from trusted local growers, striving to maintain consistency by working with the same vineyard parcels year after year.
