Vineyard Notes: 18 hectares organically certified since 1995 are planted by massal selection to clones of indigenous Verdicchio di Matelica. The vineyards are nestled in a cold and dry microclimate alongside the Esino River between the Apennine Mountains and the Adriatic Sea. 

Winemaking Notes: Harvest is done by hand with small boxes to keep the fruit in excellent condition. Grapes are softly pressed into stainless steel for fermentation at low temperatures. The wine rests on the lees for 4 months in stainless steel to enhance the beautiful texture. Fining agents are not used. Malolactic fermentation is stopped. 

About Verdicchio: The Marche is the land of Verdicchio. The best expressions of Verdicchio hail from the DOCs Castelli di Jesi and Matelica. The Matelica DOC is located further inland than Jesi, producing a firmer, more aromatic, and slightly more powerful version of Verdicchio. It shows fine balance and structure and has great complexity when aged for several years. As with the Jesi wine, it is the perfect partner to seafood and baked pasta. Collestefano is considered among the best producers of Verdicchio and consistently wins the prestigious Tre Bicchieri award.

The Matelica zone, in the Marche region of Italy, is farther inland and higher in elevation than the coastal Castelli di Jesi zone, a better-known area for Verdicchio. This wine, made from organic grapes, is strikingly energetic, with whiplash acidity and saline, mineral and herbal flavors. It would be superb with numerous summery pastas, whether white clam sauce, pesto or fresh tomatoes."
