Auxerrois is one of the most widely planted varieties of Alsace, and is equally well suited to Northern Michigan. The grapes ripen early with very low acidity. This allows LFC an opportunity to incorporate the juice into other wines - Pinot Blanc, Murmur, Luthier - to help round out the midpalate. Beginning in 2017, they have also been bottling Auxerrois as a single varietal wine.
The 2021 Auxerrois was the culmination of years of experience. 2021 was an especially warm vintage, and the bunches had to be harvested early before the acid dropped too low. Fermentation over the years has been a bit sluggish, often halting itself before completion. Therefore in 2021, LFC integrated a higher yeast population, ran the fermentation warmer, added oxygen bubbles during fermentation, and stirred often to encourage the yeast to eat all the sugar. This resulted in a balanced, dry Auxerrois with healthy lees for aging.
