Winemaking Notes: The Sikelé Nero d'Avola is vinified in concrete tanks, which captures the freshness of the fruit. Aging lasts for 8 months in the tank and 3 months in the bottle. A small amount of SO2 is added at bottling. The wine is not fined and not filtered.

Tasting Notes: Ruby red with purple highlights, the wine shows aromas of red fruits and berries with notes of pepper, tobacco, and stone. It is balanced and persistent. Bright and highly drinkable.

About the Domaine: The estate was founded in 2001 on a hill formerly known as Poggio dei Fossi in the southeastern Sicilian province of Siracusa. Today the Paternò sisters, Marilina and Federica, are at the helm. Their philosophy reflects a deep respect for the land, with organic farming and natural winemaking. They have been influenced by Frank Cornelissen, the guru of natural winemaking on Mount Etna.
