Terroir Notes: The Bourgogne Côte Saint-Jacques vineyard is located between 135 meters and 210 meters above sea level, on the hillside facing south-east. The vines draw their nutrients from the chalky formations of the Upper Turonian, characterized at the base by a white chalk with flint, evolving towards a chalk without flint towards the top.

Winemaking Notes: 100% manual destemming during vatting in a Georgian qvevri type amphora. Then, maceration for 2 to 3 weeks until the end of the alcoholic fermentation. The grapes are softly pressed in a vertical press then put back in amphora for one year of aging. The wine is neither filtered or fined. No additions of sulfites are made.

Tasting Notes: This rosé combines freshness and structure. It is beautiful and original.
