"The still white, and sparkling, wines of Blanc de Morgex are absolutely fantastic and yet they remain under the radar outside of Valle d'Aosta. This is as alpine as it gets, with elevations around 1,200 meters above sea level. The grape that excels here is Prié Blanc, a cold resistant variety that produces some of the most high acid, mineral-laden and stimulating wines you can imagine. From the producers in this region, Ermes Pavese stands out, not just for quality, but also as one of the few family-run operations in the area whose products make it into international markets. At these altitudes Prié Blanc is able to grow on it's own pre-phylloxera root stock, which Pavese takes full advantage of."
Terroir Notes: The Prié Blanc is sourced from 6 hectares of terraced, south-facing vines in small, scattered parcels surrounding the villages of Morgex and La Salle. The vines are trained in pergola bassa on their own rootstocks.
Winemaking Notes: The grapes are manually harvested. After crushing and a 1-2 day maceration in the press, the wine ferments with a pied de cuve and selected yeasts in stainless steel tanks. The wine remains on fine lees with regular batonnage until assemblage prior to bottling. The majority of vats go through spontaneous malolactic fermentation.
Tasting Notes: Ermes Pavese's Prié Blanc is a stunning white wine produced from some of the highest vineyards in Europe. It is austere, racy, and mineral with aromas of citrus blossom, lemon, and crushed stone. It's vivacious with great length.
