**About Capón: This mezcal was made from capón agaves. As an agave is ready to flower, it’ll form a bump at the top, which signifies that a quiote (flowering stalk) is about to start growing. It is normal practice for mezcal agave farmers to cut off an emerging quiote in order to keep all the energy and carbs in the piñas. Once cut, the plant can be harvested. Capón agaves then can stay in the ground months or even years after the quiote has been cut. Thus capón agaves acquire loads of sugar and complexity and when finally harvested they're at their ripest.
