Winemaking Notes: This limited production cuvée comes from vines averaging 50 years on the mid-hill, south-facing vineyard known as Les Chassignols. About 50-70% of the Gamay is destemmed. Spontaneous fermentation occurs in stainless steel tanks for about 20 days. The wine is racked to demi-muids and foudre for 6-8 months of elevage. Malolactic fermenation occurs. The wine remains on its fine lees until assemblage. It is bottled unfined and with a small addition of sulfites (~15mg/L), which are applied at harvest, after malolactic, and at bottling.

Tasting Notes: Pascal Granger Les Chassignols is a sturdy wine, reserved in its youth, marked by the smells and flavors of red fruits, roses, and spice.
