Vinification: Pésico is fermented with indigenous yeast in used French oak barrels of the sizes 225 liters, 228 liters and 500 liters. The wine matures for approximately 21 months in the oak. No sulfites or any other additives are used during the entire vinification process.

The wine is a window into the raw, rugged, Spanish north via the indigenous grapes Carrasquín, Mencía, Albarín Tinto, and Verdejo Tinto. In a region that's know for its cider as opposed to wine, the small hamlet of Cangas del Narcea is producing some of Spain's most energetic wines. Dominio del Urogallo's wines are at the top of the list! Pésico has a medium body, sturdy tannins and a great texture.
