Inspired by wonderful French and Italian red sparklers, Los Pilares has decided to craft their own. The High BPN ("Black Pet Nat") is made from 100% Cabernet Sauvignon, picked young to capture that fresh, tart taste that translates into a good sparkler.
Vineyard Notes: The vines are 9 years old. The vineyard is over 4,500 feet in elevation and planted on the steepest slopes ever seen without terracing.
Winemaking Notes: The Cabernet is manually harvested. Grapes are foot-stomped and fermented with indigenous yeast for four days with skins before being pressed to tank. Some must during harvest time is set aside and used to finish the fermentation in bottle. High BPN is not disgorged.
