Vintage Notes: 2020 was a wonderful gift of nature with a frostless spring followed by warm summer days and cool nights. The crop was full, and the vines flourished producing grapes with good sugars, intense flavors, and crisp acidity.
Winemaking Notes: This year’s Rose is 80% Cabernet Franc from Jeff Lemon in Berrien County and 20% Pinot Noir from LePage Estate. Before and during the late September Pinot harvest, Wyncroft separated any clusters that had pinkish skins to be used for rosé to maximize color intensity in their red Pinot Noir. The grapes were cold soaked on their skins for three days until the juice had turned a beautiful dark cerise, then pressed off and fermented to full dryness using 71-B Burgundy yeast. The later ripening Cabernet Franc came late October. The grapes cold soaked. A portion was bled off and added it to the fermenting Pinot. Finally, the last batch of Jeff’s latest ripening block came in; it was cold soaked. The entire batch for this rosé fermented using Épernay 2 Champagne yeast.
Tasting Notes: The color is a brilliant but delicate fuchsia pink tinged with salmon. Aromas of fresh red currant, Washington red huckleberry, and minerals lead into a dense palate of cherry, currant, and sweet/tart salmonberry with a long smooth mineral-laden finish. Pair it with spring pasta salads with fresh peas, asparagus, and shrimp. Also try it with grilled salmon or pork loin or a great ham sandwich.
