Winemaking Notes: Grenache Noir was harvested from 5 year old vines. Fermentation occurred spontaneously with indigenous yeast in open bins. The wine was pressed into tanks. Pressed whole cluster Cabernet Sauvignon was used as tirage for the secondary fermentation in bottle. The 'BPN' was bottled without disgorgement. Total additions of sulfites equals 20 ppm.
