Winemaking Notes: Mari Ancestral Lumassina (read more on Lumassina) is re-fermented in the bottle without added sugar, using instead the residual sugar left from a blocked primary fermentation. The secondary fermentation lasts 30-40 days with bottles stacked in a cool environment. The aging in the bottle lasts about 4 months. The wine is not disgorged, which means the yeast remains to give it a cloudy look and fun texture. The yeast amplifies and widens the aromatic range of the wine, blending harmoniously with the grape's citrus notes.

Tasting Notes: The wine has a plethora of aromas, which change over the course of the bottle. Enjoy golden apple, citrus fruit, brioche, mineral complexity, and a hint of salt. The flavors are complex and persistent. This ancestral sparkling is very versatile; pair it with light appetizers, fried fish, or drink on its own.

Serving Notes: Shake it lightly after it has been chilled to put the yeasts back into suspension.
